Webber Academy: we do what we preach

Lunch: roast beef with baked potato wedges, fresh green salad, fresh fruit, Thai curry for vegetarians. Chicken chilli with a pretzel bun, caprese salad, and chocolate-covered fresh strawberries. Butter chicken with rice and roasted veggies. Is this a restaurant menu? No, these are some of the offerings of our school cafeteria. In many schools, or other institutions, people talk a lot about proper nutrition but their cafeterias still offer only hot dogs, fries, nachos with “cheese” and pizza pockets. At Webber Academy, we do what we preach. Our executive chef Thuy makes everything on site, with fresh and often organic ingredients, helping us teach the students what proper nutrition is all about. OK, I admit, it’s not all about teaching; I enjoy these great lunches myself. There is always homemade soup (not from a can), fresh salads, juices, and beautiful, delicious main courses. You can’t have gluten? No problem! There is always an option for you, topped by Thuy’s yummy gluten-free lemon loaf (which, by the way, is highly addictive!). Lactose free? Sure! Thuy will accommodate that too. Craving sugar? Try the salted caramel ice cream from the local producer. You may ask “Do kids like these healthy dishes?” Well, if these are the choices, they quickly learn what good food tastes like. The line up to the cafeteria at lunch proves that.
