What to do with the leftover chicken

Last night we had roasted chicken for dinner. Today, I looked at the remaining half and decided to do something different with it. The result of the work, inspired by various websites, recipes, observations and by what I had available, was an eye-pleasing and a palate-pleasing dish, which I will make again for sure. This can be done with any meat, bacon slices (cooked), even fish, as well as vegetarian leftovers.

Cut the leftovers into very small pieces. Add any spices you like. Today, I used the Thai spicy chilli sauces, but really sky is the limit here.

Use a mandolin to cut red potatoes into very thin slices of the same thickness. This can be done with a knife, and if slices are thicker, just add cooking time. Put the slices in a big bowl, add salt, pepper, and heavy cream. Let the potatoes soak.

Rub a stainless steel or pyrex bowl with lots of butter. Preheat the oven to 350 degrees. Layer potato slices, overlapping them. Alternate the layers: potatoes, shredded cheese, potatoes, chicken, potatoes, chives, potatoes, until you fill the bowl.

Bake for 50 minutes. Then put on top a circle of puff pastry, and bake for another 50 minutes. When done, cover the dish with a cookie rack and flip the potato dome carefully. On the rack, put the dome back into the over, raise the temperature to 400 degrees and bake for another 15 minutes until the potatoes on top are nice and crunchy. So good!
