Vegan, anyone?

I like bacon too much to become a vegan. J But after watching the documentary “The Game Changers” we ran a vegan experiment at home. My husband lasted two weeks, and I… well… about a week, with a little break in between for a bacon and egg sandwich. I did like the vegan meals we tried, both at home and at a restaurant. I did feel lighter after those meals. I did not have less energy. As recommended in the documentary, we will have a couple of days each week without meat, and not because we feel sorry for the animals or because we want to save the planet. We have always appreciated the nutritional value of vegetables. We eat a lot of vegetables anyway, and through our little experiment, and thanks to our daughter’s creativity, we discovered some great recipes for tasty and nutritious plant-based meals. Here is one example (see the photo): baked (or for vegetarians breaded fried) slices of eggplant with an antipasto sauce, sautéed cabbage and kale mix with spicy peanut sauce, quinoa with raisins and almonds. That was one delicious meal!

As an aside note, my daughter and son-in-law are still continuing their vegan experiment, and I think their approach is better. A longer experiment will probably be a better opportunity to see what this diet does to one’s body, and a blood test after will also be interesting. And the meals they prepare are fabulous. I should invite myself for dinner tonight.
