Blast-of-flavour bites
I just came home from an evening with an acclaimed journalist Andrew Coyne. Webber Academy put on another excellent event, and I very much enjoyed listening to this knowledgeable and eloquent presenter. But I also enjoyed the pre-talk bites: creative, loaded with flavour, and beautiful creations by Chef Tyler from Hotel Arts. This was a good reminder of how great hors d’oeuvres can add a special dimension to a gathering. My favourite this evening was definitely pieces of compressed watermelon with balsamic reduction and pistachios. What a fantastic combination of flavours! A delightful explosion on the palate!
